Recipes: Guatemalan Chilaquilas

One of the hubby's favorite foods are Guatemalan Chilaquilas not to be confused with Mexican Chilaquiles.  The only problem was that my mother-in-law did not want to give me the recipe so I Googled it and found it.  This recipe is really good and very easy to make.

Sweets: Easy Peasy Banana Chocolate Chip Bread (Pinterest Inspiration)

Like most of you guys out there I'm a tad obsessed with Pinterest. This week I've decided that it was time to stop pinning and start doing.  For my first project I choose this pin from Artsy Fartsy Mama since it seemed easy enough to do especially since I had overripe banana's on the counter.  The hubby is used to my from scratch banana nut bread so I wasn't sure how he was going to react to this bread.

Sweets: Tiramisu

A few years ago while on a date with the hubby (back then boyfriend) we decided to order some tiramisu and with the first bite we were hooked.  Since then we have tried tiramisu at different restaurants we find ourselves at.  Saying that we LOVE tiramisu is an understatement but I have always been intimidated in making it myself.  Last year I decided that it was time to give it a try.  My first attempt didn't turn out as I had planned but we still managed to eat it. (Sorry, I didn't take any pictures of that disaster.)  The mixture never set and it was more like a tiramisu drink than anything else.  Fast forward to this year when I decided to make it once again.  As it turns out practice makes perfect or at least better, way better.

One of my favorite meals my mom used to make for me when I was little was Carne Molida con Papas (Ground Beef and Potatoes).  Now that I'm older and I have learned how to make it I've added my own twist to it.

Recipes: Calabacitas con Queso (Zucchini with Cheese)

In my last post I mentioned that I was going to start a new series called Mexican Mondays.  If you've been following my blog then you should know that I'm Mexican American and I've realized that it would be fun to feature some recipes that I grew up with.  For my first post I'm featuring one of my favorite recipes and one of the easiest one to make, calabacitas con queso (zucchini with cheese).  My mom used to make this recipe for me when I was little and my grandma used to make it for me when I would go visit in Mexico.  When I had this dish at my grandmother's house she would make it with vegetables that were grown in their farm and with homemade cheese.

Sweets: Red Velvet Gooey Butter Cookies

About a month ago I had a red velvet cake box sitting in the pantry but I wasn't really craving cake or cupcakes.  After doing a quick google search I found this recipe from the lovely Paula Deen and since I had everything on hand away I went.


Instead of using chocolate cake mix like Paula did I used the red velvet cake mix I had at hand.   Let me just tell you that my co-workers and neighbors loved them and keep requesting them.

Sweets: Strawberry & Cream Cake

Last May I was fortunate enough to have my mama visiting for Mother's Day.  I had never made my mama a cake before so I really wanted to impress her.  Since she isn't fond of chocolate I opted for a strawberry one instead.

Sweets: The Best Pancakes...

...well at least thus far.  Growing up as a child my mom used to make us pancakes on the weekends, the box kind.  When I worked at the "Happiest Place on Earth" everyone used to eat pancakes at the restaurant where I worked but I used to get them from the employee diner, the pre-made stuff. Now as an adult I decided that it was time to kick the box and pre-made habit and make them from scratch.


I searched all around the web until I found a recipe that I believed deserved some attention and where I can use up some buttermilk I had.

Sweets: Birthday Strawberry Cheesecake

My younger cousin turned 16 years old last month and I wanted to bake her something special.  I decided to make her cheesecake since I had previously baked one and she loved it.  I took one of my favorite cheesecake recipes and added my own touch to it.

Recipes: Glazed Brussels Sprouts

I went to do my monthly grocery shopping the other day and I found myself standing in the produce section looking at recipe cards the grocers have for customers to take.  I grabbed one that said Glazed Brussels Sprouts  and I headed on my way.  Please keep in mind that I had never purchased this vegetable or even tasted it.




Today I prepared them and to my surprise they were pretty tasty. My hubby liked them but didn't love them.  I'm trying to expand our palate and as I do that I will share with you my experiences.
